Fudge Brownies


Very easy  fudge brownies 
1 cup cooking oil
2 cups sugar
1 cup cocoa
1 tsp baking powder
1 tsp salt
1 tsp vanilla extract
3 large eggs
2 cups flour
2 cups semi-sweet chocolate chips 

Preheat the oven to 350°F. 
Grease a 9″ x 13″ pan and set aside. Combine sugar and oil, mix well.
Stir in the cocoa, baking powder, salt, and vanilla extract. 
Add in the eggs, stirring until smooth.
Add the flour and chocolate chips poor the batter into prepared pan. Bake the brownies for about 40 minutes or until when inserted a skew into the center comes out clean. 
Take out of the baking pan and put in a cooling rack. 
Let it cool before slicing.

Ingredients 
Angel hair pasta
Sugar

Cardamon
Dried raisins (optional)
Water

Direction 
Put oil in a skillet 
Add angel hair pasta and stir fry until golden brown
Add water enough to cook your pasta approx 3 cups for 1 box of pasta.
Add cardamon sugar and sal, if you are using raisins now is the time to add.
Cover as nd cook until all water is dry. Make sure you stir often.
Taste if not cooked to your like add a little more water. 

Homemade Garlic Bread



Ingredients

Baked garlic past 
Parsley

Direction
Slice the bread if it is not pre sliced and leave it overnight. The bread needs to be crust.

Mix butter, olive oil, parsley and backed garlic paste

Toast sliced bread under broiler until the bread is golden brown.

Spread the on both sides of each slice of bresd.

If you want more crust you can put under broiler again for 1 min

Achali Ya Pilipili









Ingredients

3 cups diced chili peppers
8 cloves of garlic
1 teaspoon fresh ginger
1/2 cup lime juice
2 tablespoons white vinegar
1/2 small white onion
4 tablespoons oil

Direction
Put all ingredients in a blender or food processor except for oil and vinegar

Process until smooth but not too liquid

Put oil on the deep frying pan in a high heat

When the oil is heated but not too hot add the mixer and cook for 5 minutes.

Reduce the heat to med/low and cook for another 20 to 25 minutes or until there is no more lime juice. Stir occasionally

Add the vinegar and cook again for 10 to 15 minutes

Let it cool before you put in a clean and dry glass bottle or container. There is no need to refregirate it unless the weather is too hot. It can be kept in a room temperature for two weeks and in a refrigerate for up to two months. 

Best to eat with sandwiches, burgers, sauces, stews and anything you want a little spicy. 




African Egg Plant & Fowl Chicken Pepper Soup



6 African egg plants
Small fowl chicken
2 large potatoes
1 small onion
2 small carrots
2 tablespoons lime juice
1 teaspoon pepper soup spices
Water to cook


Add the chicken in a pot and cook until is soft. It can be 45 mins to 1 1/2 hour.

Add all other ingredients and cook for 20 minutes. 

Serve warm with dinner rolls or French bread 






Homemade Spinach Basil Linguine Pasta



Ingredients
1 cup all purpose flour
1/2 cup whole wheat flour
2 cups spinach
1/2 cup basil leaves
1 tablespoon olive oil
2 large eggs


Directions

In a food processor put eggs, spinach, basil and water. Use a pulse button until smooth. 

Scrap down sides to make everything down.

Add flour and use the pulse button again until the dough come together in a soft and smooth ball.

Lazy Man Biryani



This is a simple Biryani that anyone can make it.

Ingredients
1 large onion
2 medium diced tomatoes 
2 teaspoons Biryani masala 
4 large bay leaves
1 teaspoon coriander leaves
1 cup yogurt
2 tablespoons ghee
2 tablespoons veg oil
2 pound chicken legs
3 cups bismat rice
1 teaspoon salt
1 teaspoon chili powder
5 cups of water or unsalted chicken broth for more flavor (this depends on the rice you have) if the rice cooks faster then cut the water down to 4 cups 


Direction
1. Marinate chicken, salt and yogurt for more than 2 hours.
2. Fry onions, then add tomatoes and all other inredients except the ghee and the marinated chicken.
3. Cook until all the ingredients are well cooked and mixed. Add water to make it a little soft. Set aside.
4. Thoroughly wash the rice.
5. Layer the rice, marinated chicken and the fried tomatoes sauce. Drizzle ghee in each layer.
Add the rest of the water and cover with foil paper.
6. Bake in a 350 F degree preheated oven for 1 hour or until the rice is fully cooked.

Put all the ingredients in a blender or food processor. Use a pause button and press few times until you reach the consistency you like. Not too smoothie but not too chunky neither.

Watch out food lovers! There's a new chef in town. This meal was prepared by my 10 years old daughter, ofcouse under my supervision but it is her first ever meal to be prepared by her alone from kneading the dough to rolling and cutting into pasta shape.

Classic Sweet Tanzanian Crepes



3 fresh large eggs
2 tablespoon ghee, melted
3 tablespoon sugar
1/2 teaspoon salt
1 1/2 cups all purpose flour
1 1/4 cups milk
1 tablespoon fresh lemon juice
1/4 cup vegetable oil for cooking  


Put all the ingredients in a big bowl or standing mixer.

Mix until smoothie and fluffy.

Let the batter sit for 30 to 45 minutes

Use the heavy skillet in a medium heat

Add a teaspoon of vegetable oil. 

Depends on the size of your skillet but the rule of thumb is to make as thin as possible crepes.

So for an 8 inch skillet use about 3 tablespoons batter, 10 inch skillet use about 1/4 cup, for a 12 inch skillet use about 1/3 cup.

Cook on one side until you start to see bubbles. Or when lift with spatula it cones out easy then flip on another side, add 1/2 teaspoon vegitable oil again if it is too dry.

Cook until brown on both sides.

Homemade Dumpling Wrapper

Ingredients


2 cups all purpose flour
1 cup water
1/2 teaspoon salt

Healthy Spinach Chapati



Ingredients
8 ounces baby spinach
2 eggs
1 1/2 teaspoons Vegitable oil
1/2 teaspoon salt
1 cup water
3 tablespoon ghee
5 cups all-purpose flour, or as needed
More vegetable old to get your chapati

Direction
Blunch the spinach, drain the water once is completely cool.

Combine spinach, eggs, vegitable oil, and salt in a food processor; blend until smooth.

Add water and then add flour, blend until dough no longer sticks to the blades, adding flour as need.

Put the dough in a bowl, rub the vegetable oil on top and cover it with a clean warm kitchen town for 30 minutes.

Cut the dough into small balls and put them in a big tray or baking sheets. Rub oil on each again before you cover them again with a kitchen towel for 15 minutes. 

Take one ball and roll it into a  6 inch circle or more and drizzle ghee then flour on top. Cut with a knife little stripes like the thin spaghetti. Gather all the thin stripes and roll them around like a cinnamon bun. Put on a tray. Rub oil on it and cover with a kitchen towel again.  

Repeat this step in all the balls.

Let them rest again for 15 minutes. 

Put a heavy skillet on a low/medium heat. 

Take one ball andput on a kitchen board drizzled with flour and roll a nice circle (depends on your skillet size). 
Put the Chapati on a hot skillet. 

Move it around with your hand for 2/3 minutes or until it rises. Flip around. Drizzle vegitable oil or if you are using ghee to fry your Chapati then rub around and flip on another side and do the same thing.

Once is a little brown on both sides put in a plate and cover it with a pot cover. 

Repeat this step until all the balls are done. Or you can put your Baal in a plastic bag and freze them up to a month.

Thaw them for 30 to 1 hour before you roll them on a dry kitchen board drizzled with flour.

Footnote

This is a power breakfast and can be taken all year around. The oatmeal and almonds make it smoothie so you really do not need to add ice in it. 

Fluffy Goat Biryani Using The Rice That Cook Very Fast

If you have been cooking your Biryani but always it turns out to be like a risotto then look no further. Where I live the Indian stores are very far away so not all the times I'll have the luxury of having a good  basmati rice in my pantry. So when it comes to cooking the biryani I have use the long grain rice from my local supermarket but I have found out that the rice cooks very fast compared to the basmati rice I get from the Indian stores. The biryani has turned to be like a risotto for several times, so I had to be creative. I finally came up with my way of cooking and the result is just perfect. 


Ingredients

2 pounds goat meat 

1 pound long grain rice or basmati rice

3 large potatoes, peeled and halved

1 tablespoon biryani masala

1 teaspoon garam masala

1/2 teaspoon chili powder

1/2 teaspoon ground black pepper

1/2 teaspoon ground turmeric

 1 pinch saffron

1 1/2 teaspoon salt

4 tablespoons vegetable oil

2 large red onions, finely chopped

1 tablespoon minced fresh garlic, minced

1/2 tablespoon minced fresh ginger root

2 medium tomatoes, peeled and chopped

1 cup plain yogurt

2 tablespoons chopped fresh mint leaves

2 1/2 tablespoons ghee 


Directions


Mix yogurt, garlic, ginger, garam masala, biryani masala, turmeric and salt together in a bowl. Add the goat meat, toss to coat evenly. Cover bowl and marinate in the refrigerator overnight or for at least 3 hours. 

Place saffron threads in a small bowl with 1/4 cup water; set aside to bloom. 

Wash rice well (this is a very important step, wash until all the starch is removed). If your rice takes longer to cook then soak it for 30 minutes if not skip the soaking and drain in colander for at least 20 minutes.

In a large skillet, put 2 tablespoons vegetable oil fry potatoes until brown, drain and set aside.

Add remaining 2 tablespoons oil to the skillet and sautee onion until golden brown. Add the rest of spices and tomatoes. Stirring constantly for 5 minutes. 

Add mint, saffron and marinated goat, cover and cook over medium/low heat, stirring occasionally until the goat is tender, approximately 35 to 45 minutes.

It may be necessary to add a little water if the mixture becomes too dry and starts to stick to the pan.

There should only be a little very thick gravy left when goat is finished cooking. 

Now take an alluminium all purpose pan and layer the race, drizzle the ghee on top followed by the goat gravy. Repeat the same process until all the rice and the gravy is finished.

Cover well with an allumnium foil paper.  Bake it in a preheated 375 F degree oven for 45 minutes.

Spoon biryani onto a warm serving dish.

Simply Srawberry Smoothie

Ingredients

8 strawberries, chopped

1 cup almond milk

1/4 cup plain oatmeal, uncooked


Direction

1. In a blender combine strawberries, along milk and oatmeal. 

2. Blend until smooth and creamy. 

Pour into glasses and serve. 

Peppermint Flavor Mandazi

Ingredients

7 cups all-purpose flour

1/4 cup vegitable oil

1 quart vegetable oil for frying

2 1/4 teaspoons active dry yeast

1 1/2 cups warm water 

1 cup white sugar

1/2 teaspoon salt

2 eggs

1 teaspoon peppermint extract


Direction

1. In a large bowl, dissolve yeast in warm water. 

2. Add sugar, salt, eggs, evaporated milk, and blend well. 

4. Mix in 4 cups of the flour and beat until smooth. Add the vegitable and then the remaining 3 cups of flour. 

5. Cover and. set aside for up to 1 hour or until the dough doubles.

6. Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. 

7. Let them sit for 30 mins

8. Fry in 360 degree F hot oil. Make sure you get the mandazi in a medium heat until they are golden brown on both sides.

If mandazi do not pop up, oil is not hot enough. 

Once they are done drain onto paper towels.

Veggie Dream Creamy Soup (Supu ya cream)

1 cup baby spinach

1 scallion

2 small carrots

Black pepper and salt to taste

1 cup almond milk


Add all ingredients to the SouperBlast pitcher. Screw on the vent top and extract until smoothie and warm. 

Serve warm

Delicious Creamy Broccoli Spinach Soup

Ingredients

1 cup fresh broccoli

2 cups fresh baby spinach

2 large potatoes, cubed

1 small yellow onion

2 tablespoons olive oil

1 teaspoon graham masala

1 teaspoon accent flavor enhancer 

3 cups veggitable broth

1 cup water

Salt to taste


Direction

1. Boil spinach and broccoli.  Keep in a refrigerator overnight.

2. In a skillet put oil in a medium heat. Add onion and potatoes fry until golden brown. 

3. Add the spices and continue stirring. 

4. Take out of the heat. 

4. Add water, spinach and brocoll in a blender and blend. 

5. In a heavy pot put the vegitable broth and the blended vegetables in a medium heat. 

5. Cook for 5 minutes and then and the potatoes stir fried. 

6. Reduce the heat and cook for 15 more minutes.

If it is too thick add water. 

Serve warm
