Baking Tips

Baking tips:
Tip 1.
When making chocolate chip cookies, or any type of cookie that you want to stay soft and moist. Place in a tight lid container with a piece of bread!
Tip 2.
If you don't have any buttermilk, you can make your own. For 1 cup milk mix with 1tbsp of vinegar or lemon juice. let stand for 5 mins. Or you can use yogurt.
Tip 3.
For baked goods use unsalted butter or use less salt than the recipe called for..
Tip 4.
When cutting brownies use a plastic knife

Tip 5.
When baking with honey, remember the following: Reduce any liquid called for by 1/4 cup for each cup of honey used.  Add l/2 teaspoon baking soda for each cup of honey used. Reduce oven temperature by 25 F to prevent over-browning.

Tip 6
If your cake recipe calls for nuts, heat them first in the oven, then dust with flour before adding to the batter to keep them from settling to the bottom of the pan.  

Tip 7 
To make your own corn meal mix: combine 1 cup corn meal, 1 cup all-purpose flour, 1/2 teaspoon salt, and 4 teaspoons baking powder. You can store it in a tightly covered container for up to 6 months.

Tip 8
A Perfect Pastry Crust?  In your favorite recipe, substitute a  4:1 ratio of lard:butter.
