Easy Yummy Carrots Cookies

This is such a yummy recipe and super easy to make. You can’t go wrong. My 5 year old daughter and I make this together all the time. It is not a perfect recipe but healthy. 

Ingredients
1 cup brown sugar
1 cup canola oil
3 eggs
1/2 cup applesauce
3 cups carrots
1 ½ whole wheat flour 
1 ½ white flour 
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoon vanilla extract
1 teaspoon vinegar (option)
½ white sugar  
1 cup oatmeal (option)


Directions
Preheat oven to 350 degrees F (180 degrees C).
In a mixing bowl, cream the canola oil and brown sugar, eggs one at a time and vanilla; mix well.
Combine  the dry ingredients excerpt the white sugar and add to the creamed mixture and mix well.
Add grated carrots and mix again but do not over mix.
Carefully shaping balls of dough into a plate containing sugar. 
Put them onto an ungreased baking sheet. Flatten with fork. Bake for 12 minutes or until done.

Papaya Juice (Juisi ya Papai)

Ingredients 
Papaya
Milk
Fresh lemon juice
Sugar or honey

Ingredients
4 cups - All purpose flour
1/2 tbsp - Baking powder
1/2 tbsp - Baking soda
1/8 tbsp  - Salt
1 cup - Sugar
1 cup  - water (milk option)
1/4 cup - Vegetable oil 
2 cups - Vegetable oil for frying




Tanzanian Buns (Mandazi Style 1) Made with Baking Powder


Ingredients
1 egg

1/2 cup sugar
1 cup milk
4 Tbsp. margarine, melted

3 cups white flour
2 tsp. baking powder


1/2 tsp salt 
Oil (for frying)

Directions
  • Bring all ingredients to room temperature before mixing them together.   

Tanzanian Buns - Mahamri (Mandazi Style 2) Made with Yeast


Ingredients
1/2 cup sugar
1/2 cup milk
2 Tbsp. margarine, melted

3 cups white flour
2 tsp. yeast

1/2 to 1 cup water
1/2 tsp salt

Direction
  • Bring all ingredients to room temperature before mixing them together.   
  • Mix all ingredients in a bowl and kneel it until you form a dough.
  • Add more water or flour if necessary but you need to have a dough like a bread dough texture. Soft but not too sticky. 
  • Cover the bowl and keep it in a warm place until double the size.
    Roll the dough on a lightly floured board until it is about 1/4 inch think. 
  • Cut into the shape you like and fry in hot oil. 
  • Fry until both sides are golden brown. 
  • Remove Mandazi from oil and drain on paper towels 


Ndizi Mbivu za Kuchemsha na Mchuzi wa Nyama (Ripe Boiled Plantains with Meat Stew)

One day I went to a party that was hosted by one of my Nigerian friends. I ate this food and liked it so much when I asked them what was that they told me it was Boiled Plantains. I didn't ask much how they cooked it because I thought to myself what could go wrong when you just boiling ripe plantains right? Wrong....The fisrt time I tried to make this food it came out like a baby food.....Then I found the secret was not to peel off skin until plantains are done cooking. 



Vitumbua (Tanzanian Coconut Rice Cup Cakes)

Ingredients


2 cups rice flour   
1/2 cup all purpose flour
1 tablespoon y
east
1 cup sugar  
1/2 cup coconut cream
Cardamon pods

Water at room temperature
Oil for frying


Cooking part

1. Soak the rice in water for 4 to 12 hours. Then empty the water completely.







2. Use blender or food processor to make fine flour




Process unit you get a thick creamed mixture



In a large mixer bowl combine 1/2-teaspoon sugar, 1/2-cup water and yeast let it sit for five minutes. Then add the rest of the ingredients and mix well until smooth. Cover the bowl with a hot wet towel to rise
The norm way to make them us by using vitumbua pan. If you don't have then use the Japanese pan, non-stick muffin pan or heavy frying pan. Heat the stove at medium-high adds a tsp of oil. Allow the oil to heat and then pour the mixture until reaches 3/4 to the top (like 1/2 a cup). Turn when tops are covered with bubbles and edges look cooked. Remove from heat when kitumbua stops steaming or test with a skewer to see if it is done.

Place them on a paper towel right away.

Muffins za Ndizi (BANANA MUFFINS)

Mahitaji
2 1/4 cups unga wa ngano
1/2 teaspoon chumvi
1 tsp baking powder
1 tbs  magadi soda
1/2 teaspoon mdalasini
1/2 cup vegetable cooking oil
1/4 cup of applesauce
1 cups sukari
2 Mayai
3 Ndizi zilizoiva (peeled and mashed)
1 teaspoon vanilla
1/2 cup walnuts or pecans, chopped(option)

Jinsi ya kutengeneza
Kwenye bakuli kubwa changanya ndizi, mayai, vegetable oil na vanilla.
Kwnye bakuli nyingine changanya unga, chumvi, baking powder, magadi soda na mdalasini..

Chanaganya vitu vyote pamoja lakini hakikisha hukorogi sana.

Kama unaweka nuts basi changanya mwishoni

Paka chombo chako cha kuoka mafuta na uweke kama 2/3 full.

Weka kweny oven iliyopashwa moto kwa 350°F kwa  dakika 25-30 au hadi ziwe za brown  na ukiweka uma au toothpick inatoka safi .

Hii recipe inasema uoke muffins zako kwa dakika 25 hadi 30 lakini zangu ziliiva kwa dakika 20 tu hivyo angalia sana usije ukaziunguza..

*Ukipenda unawea kuweka katika chomboo cha kupikia mkate hii recipe ukawa mkate wa ndizi badala ya muffins za ndizi.
**Pia unaweza kutumia batter badala ya mafuta ya kupikia.

Kashata Za Nazi (Tanzanian Coconut Kashata

Ingredients

1 cup sugar
1 cup moist grated coconut (or one cup of dried grated coconut moistened with 2 tbsp of milk or water)
1/2 teaspoon Cardamon 
1/4 cup whole wheat flour (option)

Food color (option)


Directions

Get fresh matured coconut


Get the coconut meat out of the coconut
 

Grate coconut as needed or finely chop in a food processor.. 
 

In a hot skillet, heat the sugar until it melts and just when it begins to turn brown reduce heat. 


 Add coconut and all other ingredients mix well with a wooden spoon for about a minute.


Poor the mixture into a pan that has been lightly greased or lined with waxed paper.  Use a spatula to layer the top and let it rest for few minutes. 


Cut into squares or diamonds while still warm.


* For crunchy kashata use the direction
*For chewy kashata add one spoon of water


Let cool and serve.

Mandazi Ya Nazi (Coconut Mandazi)

Ingredients
6 cups multipurpose wheat flour
1 eggs
2 tablespoons margarine, butter or vegetable oil
1/2 sugar
1 can coconut milk
2 1/2 teaspoons yeast
1/2 powder milk ( or 1 cup milk)
1 cup room temperature water if you are using powder milk
1 teaspoon ground Cardamon
pinch of salt
oil for frying
